Amish Zucchini Brownies
These Amish zucchini brownies are great for summer time treats. Of course brownies are a great anytime treat but they are especially "helpful" in the summertime. "Why?" you ask.
Well, if you have a garden, chances are you've got some "extra" zucchini that you don't want to go to waste.
So, here's a great recipe that keeps it from going to waste - but it may send it to your waist ;]
Yet, you can console yourself knowing that surely you've added some extra nutrition by adding zucchini to the mix.
1 1/2 cup oil
2 cup sugar
2 cup flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
4 Tbsp. cocoa
1 tsp. vanilla
3 cups shredded zucchini
1 cup nuts
Beat eggs, oil, and sugar. Sift flour, soda, cinnamon, salt, and cocoa. Mix well. Add vanilla, zucchini, and nuts. Mix all together and spread on a 10 x 15 jellyroll pan. Bake at 350 degrees for 30 minutes. These are good plain, but you may frost them with you favorite frosting.

Here's a free "value added bonus." This is the recipe (not found in the cookbooks) my wife used for the frosting (and just FYI it is a tasty addition!)
1/2 cup butter
1 tsp. vanilla
1 1/2 cup sugar
1/3 cup evaporated milk
Combine in pan. Stir well and bring to a boil for 1 minute. Stir in 1/2 cup of chocolate chips. Stir until melted. Spread on brownies immediately.
Would suggest that you let it cool sufficiently before cutting and eating - bet you can't eat just one!
