Homemade Amish-style blueberry cream muffins are a great way to start off your day right.
Are you looking for something quick to eat that is actually filling? And by using real, fresh blueberries - they actually taste good!
Some store-bought muffins that claim to be blueberry are actually only blueberry "flavored."
Seriously, the supposed "blueberries" are not real fruit - they are actually synthetic, chemically made blue colored chunks that only look like blueberries!
So, for your next breakfast, or even a snack, use this Amish-tested recipe to help you whip up a batch of real muffins today.
They're good fresh from the oven or warmed up in the microwave.
2 c. sugar
1 c. vegetable oil
1 tsp. vanilla
4 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
2 c. sour cream
2 c. fresh blueberries
In a mixing bowl, beat eggs. Gradually add sugar. While beating, slowly pour in oil. Add vanilla. Combine dry ingredients. Add alternately with the sour cream to the egg mixture. Gently fold in blueberries. Spoon into greased muffin tins. Bake at 400° for 20 minutes. Yields 24 muffins.
