Now, you can make homemade bologna like the Amish! Ever wonder just how they make it? Well, wonder no more, simply give this recipe a try.
Ok, granted, it may not compare to Troyer brand Trail Bologna, but at least you'll not need to worry about that messy stuffing into casings thing - you simply use jars.
Here's a quick reminder - be sure to use jars that DO NOT narrow at the mouth. You'll want to use wide mouth jars that have no tapering. Otherwise, you'll have a pretty tough time getting the bologna out of the jars!
If you're feeling a little creative you could always try substituting in some ground pork for some of the hamburger. Or, you could even use some fresh bulk sausage for some extra zing.
Use one big dishpan to mix 25 lb. fresh hamburger, 3/4 lb. Tenderquick and 1 qt. warm water. Let stand overnight. Next morning add:
1 T. pepper
1 big handful seasoning salt
1/2 C. sugar
1 t. garlic
1 t. liquid smoke
1 qt. warm water
Mix all together, put in jars and cold pack 2 hours.
